Afternoon Iced Coffee
I don’t know about you, but having two of my three children unexpectedly homeschooling this year has me lagging in the afternoons. While I should probably be doing yoga or meditating in order to pick myself up, those methods are difficult with a one-year-old, five-year-old, and seven-year-old underfoot. So I have reverted to some old habits, including a big cup of iced coffee in the afternoon.
Here’s how I do it without a trip to Dunkin Donuts or Starbucks:
In the morning, my dear husband makes me two cups of coffee. While the water is heating on the stove, he likes to grind the beans while he takes the dogs out for a walk, but if you, like me, don’t enjoy grinding coffee beans, you can also buy ground coffee in the bulk section (make sure you keep it in an opaque container).
At breakfast, I have my first cup of coffee hot with some homemade oat milk. I put the rest in a mason jar in the fridge. I leave the jar in there all the time, usually partially filled in case of a coffee emergency.
Mid-afternoon, when I can’t imagine how I’ll make another set of fairy wings, read another Who Was book, or bake another strange cookie recipe, I pull out my cold coffee, throw in some milk, maple syrup, and ice and CARRY ON. If we are outside or going on a field trip, I use my travel mug. Money, packaging, and energy saved, plus I still get my iced coffee.
